Time to Cook Chili

One of the family’s favorite winter food is chili. Even making a large pot goes fast in my house. If you look online there are hundreds of recipes and I am sure most of them turn out good I like to keep it simple. I think opening the cans of kidney beans and diced tomatoes takes the longest. To spice up the chili add hot peppers including chili, habaneros peppers cayenne, or tobacco sauce (or any other hot sauce). I tend to keep my chili on the mild side, you can always add spice as needed.  

Ingredients

  • 1 Lbs. of ground beef (pork or turkey can also be used)
  • 1 tsp olive oil
  • 3 cloves of garlic (add more or less depending on taste)
  • 1 onion
  • 8 cans of kidney beans (again more or less can be used)
  • 6 cans of diced tomatoes (my family like more bean than tomatoes)
  • Chile powder (I just add to taste)
  • 1 tbsp of pepper
  • 1 tsp of salt

Instructions

  1. Brown the ground beef (pork or turkey).
  2. Finally chop the garlic and onion.
  3. Heat the 1 tsp of olive oil and sauté the garlic and onion.
  4. In large pot add the kidney beans and dices tomatoes.
  5. Add chili powder, salt, and pepper.
  6. Add ground beef.
  7. Add garlic and onions.
  8. Bring to boil and reduce heat.
  9. Simmer for at 25-30 minutes.
  10. Add chili powder as needed.

You can add additional toppings include or eat the chili as is. Chili is a very versatile dish and with many different ingredients can be added or removed.

  • Diced red onions
  • Shredded Cheddar cheese
  • Sliced jalapeno peppers
  • Sour cream
  • Saltine crackers or oyster crackers
  • Diced avocado
