Ana’s Mickey Mouse Pancakes!
Once a week usually on Sundays I make Ana and myself homemade pancakes. Ana’s Mickey Mouse pancakes are mostly shaped like Mickey Mouse and a couple of silver dollar pancakes. Anything left over I use to make my pancakes. If we have strawberries or blueberries, she will start to eat them before the pancakes are done.
Using A Box Mix
There was a time where I would just use a box mix. One of the mixes was just add water. To tell the truth they were not bad but homemade is easy and I think tastes better. I have all of the ingredients on hand except for the backing powered. I make sure that I backing power is on the shopping list not, a can will last for a while.
Maple Syrup
There are several brands of pancake syrup, but I stay away from most of them. Pure maple syrup costs more but is natural and tastes great. Some of the name brands use high fructose corn syrup, which I don’t like.
Overall
Ana’s homemade Mickey Mouse pancakes recipe only takes a couple of minutes to make, not much longer than the box recipe. If you try this recipe, I think you would like it.
Ingredients
- 1 cup of all-purpose flour
- 3 teaspoons backing powder
- 1 teaspoon salt (I usually forget this one)
- 1 tablespoon white sugar (I use two packets of stevia)
- Just under 1 cup of milk
- 1 egg
- 3 tablespoons of melted butter (Again I tend to skip the butter)
Additional Ingredients
- 1 tablespoon vanilla extract
- Blueberries
- strawberries – add on sliced on top of cooked pancakes
Directions
- Mix everything in a large bowl. (add vanilla extract, blueberries)
- Heat lightly oiled frying pan over medium heat.
- I add the batter to the mixing cup.
- Pour into a Micky Mouse shape or approximately ¼ for each pancake.
- When the mix starts to bubble, flip the pancake over to cook the other side
- Serve warm, top with maple syrup and strawberries.
