Hello Mga Palangga,

Since it’s been snowing in our area for the past few days, I feel like wanting something warm in my stomach. I am craving for Beef Sinigang with lots of vegetables in it. Beef Sinigang by the way is a Beef stewed in sour soup. In the Philippines, we used Tamarind (Sampaloc) fruit to give the souring taste. But since there’s no Sampaloc in my area, I used the powder version of tamarind mix instead. So this my my was of making beef sinigang with jackfruit & green beans.

Sinigang is very common recipe in the Philippines. Everyone loves it, (including Chris). There are several methods and styles of making sinigang; you can use any types of meats such as pork, shrimps, beef, or fish and you can add any types of vegetables as well.  Of course, you eat this with rice. Oh yeah.

So today, I realize I don’t have enough vegetables available in the fridge to make the traditional sinigang. I only have bok-choy (petchay) and green beans (sitaw) available. Typically, I used kangkong, eggplant, okra, taro (gabi), radish, and Enoki Mushrooms. It may sound weird, but enoki mushroom can add more flavor mga palangga. Try it, you will be going to like it, I promise. But this time, I’m going to use whatever vegetables available here.

Ingredients

  • 3 tbs olive oil
  • 4 cloves of finely chop garlic
  • half size chop small onion
  • 3 small size slice tomatoes
  • 1/8-inch slice ginger
  • 8-10 cups of water
  • 1 can of jackfruit
  • 1 lbs. of green beans
  • 1 baby bok choy cut into 1-inch slices
  • 1 pack of tamarind Sinigang mix
  • 3 tbs Fish sauce
  • 1 tsp. salt

Instructions:

  1. Heat frying pan and add 3tbs. of olive oil
  2. Sautee garlic, onion, ginger, and tomatoes (about 7-8 minutes)
  3. Add beef and cook until it turns brown
  4. Add 3 tbs. fish sauce (wait for 2-3 minutes)
  5. Add 8-10 cups water and bring to a boil
  6. Reduce heat, and simmer for 40-50 minutes. Until the meat is tender
  7. Add the jackfruit, wait for about 5 minutes
  8. Add in the sinigang mix (Tamarind)
  9. Finally, add the green beans & bok choy
  10. Simmer for additional 10 minutes.
  11. Taste it, you can add salt if you want
  12. Serve hot with brown or white rice
  13. Give it to Chris. He’s ready

These past few days have been cold days here in New York, with snow throughout the day, it’s normal to crave for something warm comforting food like sinigang, which the whole family love the most, specially, Chris it’s his most favorite Filipino Food. 

There are many ways of making sinigang, this dish is very flexible, you can use many types of meat such as fish, shrimp, beef, chicken & pork. As well as diverse vegetables like okra, eggplant. Bok-choy, green beans, taro (gabi), enoki mushrooms, potato, kangkong, spinach and more.

Everything is adjustable in this recipe, so whatever vegetables you have, you can definitely use it to make sinigang as long as you have the souring ingredients like Tamarind (Sampaloc) Mix Powder. You can get this mix powder online or in the grocery stores in your area. 

To sum up, “Beef Sinigang” is easy, delicious dish to prepare. Just make sure the beef is tender enough before adding the vegetables. This dish is best served with warm White rice and coke. Lol.
